Fugu Yusheng and Caviar Headline Si Chuan Dou Hua’s Luxurious Chinese New Year Offerings for 30th Anniversary
SINGAPORE – As Singapore prepares to welcome the Year of the Horse, a celebrated restaurant is marking a major milestone with a menu that blends festive tradition with daring luxury. Si Chuan Dou Hua Restaurant, a pioneer of Sichuan cuisine in the city-state, is celebrating its 30th anniversary with an array of exclusive Chinese New Year dishes, headlined by a show-stopping fugu yusheng.
For diners seeking an unconventional and prosperous start to the New Year, the restaurant’s signature fugu (pufferfish) yusheng is a must-try. This year, it takes on an even more opulent form as the Prosperity Sturgeon Caviar and Fugu Yusheng with Organic Fresh Greens, available exclusively at the UOB Plaza outlet.
The visually stunning dish features a platter of delicately arranged fugu sashimi from Japan, elegantly crafted into the shape of a horse’s head to herald the new zodiac year. The luxurious raw fish is complemented by a generous topping of sturgeon caviar and a bed of crisp, organic greens. Breaking from tradition, the salad is tossed in a tangy balsamic honey dressing, offering a refreshing modern twist on the classic plum sauce.
Prices for this premium creation start at $218++ per platter. For a more accessible but equally festive option, the restaurant also offers a Prosperity Smoked Salmon Yusheng with Organic Fresh Greens, starting at $98++.
The coveted pufferfish is showcased in a second, more contemplative dish: the Double-Boiled Fugu Soup with Moutai. This labour-intensive creation sees the fugu’s fin soaked in premium Kweichow Moutai “Golden Prince” baijiu before being simmered for over eight hours. The result is a deeply aromatic and rich broth, infusing the delicate flavour of the fugu with the complex, fragrant notes of the celebrated Chinese spirit.
Both of these premium fugu dishes are available as part of the restaurant’s Fortune Feast set menu (Set F), priced at $388++ per person. A minimum of four diners is required to enjoy the full festive experience, making it an ideal choice for ambitious reunion dinners.
